Nowadays we are being bombarded through the media and famous people with news of miraculous diets that lead to a fast and impressive weight loss. The ketogenic diet is one of them, though is not something new, because Atkins (1) and Dukan (2) already suggested this type of diet.
Is this type of diet healthy for our body? We can only research, because we grew up with the conception that the ingestion of a lot of protein and fat are harmful, and burden immensely our liver, leading to a series of complications in our health, such as cirrhosis, high cholesterol and etc ...
At a time when nutritional values are very inverse, we are lost. In the past, bread was the most important symbol of food, and today it has been neglected. This happens mainly because of the gluten that exists in wheat, which is the cause of celiac disease, then leads to a series of serious complications.
The ketogenic diet is characterized by 75% of fat ingestion and a very small amount of carbohydrates 5%, making your body use fat as primary source of energy. That changes the metabolic pathway in our body, where the primary energy consumption was glucose, now is fat. (3) (5)
Our liver is one of the most important organ in our body, all metabolic process are made through the liver. There are three important metabolic pathways fats, proteins and carbohydrates. The liver also can be a storage of glycogen, vitamins and minerals, the synthesis of plasma proteins such as albumin, and clotting factors. It also works helping our body to detox.
Recent surveys suggest that ketogenic diet can be of a great support of weight loss, consequently a big ally with the fight against obesity and diseases caused by excess of ingest caloric diet, as example, type II diabetes, high blood pressure and hypercholesterolemia. (3) (4)
So, with the continued change of the nutritional pyramid, food trends, and the increase of intolerances and allergies to certain foods, nutrition will surely shape the culinary industry. Depending on the market demand and the location of the establishment, the entrepreneur might need to adjust to the needs of the target public.

The websites that I used to describe the ketogenic diet were based on the idea that, if a world organization conveys credibility, we can assume that the facts they describe are true, since they are based on scientific studies. (3) (4) Also, books that are published are screened before approval, and such worldwide renamed authors prove credibility. (1) (2) The other blog I referred to, although is not scientifically related to the subject, nor to any known organization, the author seems credible, since she is a journalist and publishes for several newspapers, besides providing links to articles that prove her words. (5) For this reason, the blog seems reliable, because is researched based.
